Almond Flour Pancakes

 



  • 1.5 cups Almond Flour
  • 1/2 cup Tapioca flour (starch)
  • two whole eggs
  • one egg yolk
  • half cup almond or coconut milk
  • one teaspoon vanilla extract or flavoring
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • one pinch of salt

Beat whole eggs and the yolk in a bowl. In a separate bowl combine the almond flour, tapioca flour, milk, vanilla, baking soda, baking powder and the salt. Combine dry ingredients with the beaten eggs.

Preheat your griddle or skillet to medium heat. Best if all you need to do is spray with a non-stick cooking spray. Try to avoid cooking in oil or fat. Cook on one side about three to four minutes, or, until golden brown, then turn. The other side should only take half the time to brown.
