A baked sweet potato makes a healthy breakfast choice. I like to wrap mine in foil and place it in the crock pot before bed and it is ready for me in the morning. But, you can microwave it, or pop it in the oven when you get up to be ready for you after you shower. I will sometimes bake it the day before, remove the peel and refrigerate the potato to reheat in the morning for a nutritious breakfast.
Sweet potatoes are great with dairy free butter and a shake or two of cinnamon and sugar.
