Boiled Spaghetti Squash

Place your raw, whole spaghetti squash in your largest pot with cold water. Bring to a boil and let boil until quite tender. Roll occasionally to allow for all sides to be submerged in the water. Be sure it is very tender before removing from heat. How long this takes depends on how large your squash is.

Immediately drain and move from the hot pan and onto a cutting board, baking sheet or large towel. Let cool thoroughly before cutting open. I like to cut the ends off first and then cut lengthwise in half.

Remove the seeds and unsavory guts. At this point the rind should easily be pulled away from the squash. 

I like to make mine while cooking another meal and then place in the refrigerator for meals throughout the week. Heat up easily a serving for lunch or use for a supper meal and add other vegetables or a sauce. This also makes a nice breakfast sautéed with breakfast sausage or bacon and/or a runny fried egg on top.
