Cream of Celery Cauliflower Soup

Diced fresh celery
fresh or frozen cauliflower (frozen will go quicker, fresh you'll want to boil first to tender)
tapioca starch
Unsweetened Almond Milk or chicken broth (I used milk)
just a bit of diced frozen onion
garlic
salt, pepper and celery seed
dairy free butter

melt the dairy free butter in a skillet or saucepan and then add celery, onion, garlic and cauliflower. Turn the heat down to very low, cover and allow this to simmer until the vegetables are all tender.

Season and sprinkle with two tablespoons tapioca starch. Stir around to dissolve starch.

Add a cup of milk or chicken broth and stir until thickens. Add more liquid to make the consistency of a creamy soup.

Total cooking time is really just about fifteen minutes. You could add lots of things to this to make it a more rounded out meal like ground beef or chicken. You can also make this night before and then all you have to do is heat it up.
