Broccoli Vegetable Stir Fry
3 tablespoons oil
1 teaspoon chopped fresh ginger root
one garlic clove, smashed and minced
one teaspoon tapioca starch or cornstarch
one cup broccoli florets, raw
1/2 cup carrots, julienned
1/4 cup fresh snow peas
1/4 cup fresh, halved green beans
four tablespoon water
two tablespoons Coconut Aminos (a soy sauce replacement)
1/8 cup thin sliced onion
1/2 teaspoon salt
Be sure you have all of your vegetables prepared to go in the skillet before you begin. Also have the remaining ingredients measured and on the ready to go in the skillet before you start.
Sauté the ginger and garlic in the oil in a hot skillet. Sprinkle the garlic and ginger with the tapioca starch and stir around. Quickly add the vegetables, water and coconut aminos and sauté about two to five minutes on medium to high heat.
This is a meal that you should cook quickly and serve immediately. Remember that tapioca starch, if you use that or arrowroot starch, will become unpleasantly gel like if cooked too long. So you want to cook quickly and get it off the heat. Cornstarch can be used on the heat longer if you are okay with using cornstarch.
