Creamed Chicken over Cauliflower

 


Creamed chicken is a warm, comforting meal that would go great over biscuits (see the biscuits recipe in Menu Ideas Breakfast), over rice, if you eat rice, or my favorite, over boiled cauliflower.

Leave the green peas out if you do not like them. You could add diced carrot, or chopped spinach or nothing and just stick with the standard chicken and gravy recipe below.


  • one cup shredded cooked chicken
  • two tablespoons tapioca starch
  • two tablespoons dairy free butter
  • one cup chicken broth or more
  • salt and pepper
  • one to two cups cooked cauliflower 

Make a roux from the starch and butter using a whisk. Add the broth slowly while continuing to whisk and then add the cooked chicken. A dash of sage taste quite good in this dish.

Be sure the cooked cauliflower is bite sized and drained (fresh or frozen will work here). I find for best results do not put the cauliflower in with the chicken gravy but rather plate the cauliflower and cover with the creamed chicken.

Vegetable ideas you could add to the chicken and gravy:

Mushrooms, green peas, diced carrots, spinach.
