Green Peas and Cauliflower Rice

 


Green Peas and Riced Cauliflower

Two cups riced cauliflower (make yourself with fresh cauliflower or buy frozen)
one cup frozen green peas (never use canned peas in this recipe, it just does not work)
two tablespoons dairy free butter
two cups chicken broth
garlic clove, smashed-minced
salt and pepper
lemon or lime juice

Boil (blanch) cauliflower and peas in chicken broth. The amount of time will depend on if you are using fresh or frozen and also your preference of tenderness. You may find you get the best outcome to prepare the peas and the cauliflower in separate saucepans.

Melt the butter in a skillet and sauté the garlic. Add the drained cauliflower and peas. Season with salt and pepper and give a good squeeze of lemon or lime juice before serving.
